Ingredients A

500g brinjal, quartered
2
red chillies, quartered
10g 
green chillies, quartered
10 shallots, chopped
1 tbsp
palm sugar
1 tbsp
vegetable oil
3 cups
tamarind juice
Salt to taste

Ingredients B (All grounded)

1.2cm ginger
10 
dried chillies
5 cloves
garlic
1 tsp
turmeric powder
1/2 tbsp
fennel seeds
1 tbsp
cumin seeds
3 tbsp
coriander seeds

Method

  1. Heat oil and saute shallots. Add Ingredients B.
  2. Once fragrant, add in tamarind juice, salt and palm sugar. Mix well.
  3. Lastly, add brinjal, red and green chillies. Mix slowly.
  4. Once cooked, dish up and serve with brown rice.
