2/3 cup coconut flakes
1/3 cup shredded carrots (tightly packed into the cup, as opposed to loosely filled)
1/4 cup almond meal (grind almond nuts until a powdery flour texture)
1/3 + 1/4 cup pitted dates (alternative: use a sweetener like coconut palm nectar)
1 tsp vanilla extract
2 tbsp organic raw cacao powder
2 tsp organic raw maca powder
Approximately 15 pieces
Process all the ingredients in a food processor.
Form into balls (and flatten if you like).
Serve immediately or refrigerate for an hour. These are great eaten right away or cooled in the fridge.
Outcome will vary according to the quality of the ingredients used. Ensure that you only use high quality raw ingredients which are unsweetened and unprocessed.
These raw ingredients aren’t the easiest things to locate (we know because we tried), but you’ll definitely find some at Justlife Organic stores. They stock an assortment of raw foods as well as other organic products.
